I can't wait for them to arrive from Amazon! I ordered:
"Prevent and Reverse Heart Disease" by Caldwell B. Esselstyn, and
"The McDougall Quick and Easy Cookbook: Over 300 Delicious Low-Fat Recipes you can Prepare in Fifteen Minutes or Less" by John A. McDougall.

I'm really excited because I need some new recipe ideas that are quick and easy. It's not that I don't enjoy cooking ... I simply don't have time! And I don't like to prepare big meals because I end up living off the leftovers for DAYS because hubby and I eat different things (he's an omni and won't eat most of the things I eat).

I've read so many books now that tell us what we should be eating ... OK OK, I get it ... fruits, veggies, legumes, whole grains ... but WHAT do I eat? LOL What I mean is, what do I do with those things to make a variety of interesting meals so I don't go stir crazy? I have some favorites that I practically live on, but I do want to get a good variety of foods and STILL be eating things that will assist with weight loss.

I will share any great wisdom or recipe gems that I find once the books arrive. How are you all doing out there?

Well so far I've gone through the McDougall Quick and Easy Cookbook ... and this is the first cookbook I've bought in a along time where I actually think I would like a lot of the recipes! They are simple, quick and easy recipes, using basic ingredients that I have around anyway, and like to eat. So that's a big plus! Too many cookbooks I've bought have what I consider to be "exotic" recipes that I would just never eat.

I've already identified numerous recipes that I want to try right away, so this weekend I'm going to pick out several to start with so that the coming week will be completely low-fat vegan. Going vegan in and of itself wasn't so hard really ... but I did think it was going to be hard to be a healthy vegan. This book has given me hope that I can really do this.

I'll be sure to post what I eat! How are the rest of you doing out there?

Sadly, I can't keep this group going all by myself -- there are 24 members, but no one wants to post anything? I'd love to hear from some of you.

How's everyone doing? Come and post your progress reports for January if you'd like -- I've just updated mine with an 11.1 pound loss for January. WOO HOO!!!

I hear ya -- though losing weight has not been automatic since going vegan, I would still never go back to consuming carcasses.
