Apple-Ginger Muffins Recipe

  • 1 1/4 cup(s) oats, rolled, quick cooking
  • 1 cup(s) milk, lowfat (1%)
  • 1/2 cup(s) sugar, brown (packed)
  • 3 tablespoon oil, vegetable
  • 3 tablespoon honey
  • 1 teaspoon ginger, fresh, grated, peeled
  • 1 large egg(s)
  • 1 cup(s) flour, all-purpose
  • 1/4 cup(s) flour, whole-wheat
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup(s) apple(s), diced, peeled
  • cooking spray
  • 2 teaspoon oats, rolled, quick cooking

1. Preheat oven to 400°.

2. Combine first 7 ingredients in a large bowl; stir with a whisk. Let stand 15 minutes.

3. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl; make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moist. Gently fold in apple.

4. Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle 2 teaspoons oats over top of batter.

5. Bake at 400° for 18 to 20 minutes or until muffins spring back when touched. Serve warm.

Yield: 12 servings (serving size: 1 muffin).
