Wild Rice Stuffing
Wild Rice Stuffing
Makes 4 servings, 2 pts. per serving.
3 3/4c. fat-free chicken broth
1/2 lb. mushrooms, chopped
1/2 tsp. garlic powder
1 tsp. thyme
1/2 c. red pepper strips
Pour 2 Tbsp. broth into large saucepan and heat over medium-high heat.
Add chopped mushrooms and cook 7-10 min. until lightly browned. Stir in
wild rice; drizzle with 2 Tbsp. of broth. Cook 5 minutes. Add remaining
broth, garlic powder, thyme to pan and bring to a boil over high heat.
reduce heat to low , cover and simmer 15 minutes. Add pepper strips;
cover and cook over low heat 30 minutes. Preheat oven to 345 degrees.
Bake for 45-50 min. until rice is tender. (Add additional broth if
needed). Let cool 10-15 min. before serving.
