Pistachio Fluff
1 package sugar free instant pistachio pudding mix
1 large can crushed pineapple, WITH juice
1 8-oz. tub cool-whip lite
Beat together with a mixer the dry pudding mixes and the can of crushed
pineapple INCLUDING the juice. With a rubber spatula, fold in the tub
of cool whip. Refrigerate and serve. Make sure you let it sit and get
cold before eating or it doesnt taste as good.

Hey, I've had this before! It's quite good - sadly it's not on plan for me right now (darn it!) but it is very delicious. Kind of neat to see someone else familiar with the recipe! :))
I love pistachio pudding! This sounds like a healthy alternative to a "salad" that is always served at potlucks and stuff. Applegate salad? Watergate salad? Something with "gate" in it. Anyhoo, if I can find the sugar free pistachio pudding I'm definitely going to make it. Thanks for the recipe!
