             BLACK BEAN-BROWN RICE WITH A SOUTHWESTERN TWIST

  1                cup  brown rice -- uncooked
  2               cups  water
  2                     beef Bouillion Cubes
  1           teaspoon  minced garlic
     1/4        medium  green bell pepper -- diced
     1/4        medium  onion -- diced
  1          8 oz. can  diced tomatoes -- with jalapenos
  1         15 oz. can  black beans -- rinsed and drained
  1           teaspoon  ground cumin

1.  Place rice, water, bouillon cubes, cumin and garlic in a small sauce
pan.  Bring to a boil and simmer until rice is tender.  Add more water if
needed so that there is always some in the pot.  Cook until rice is tender.

2.  Add pepper, onion, tomatoes and beans.  Heat until boiling and then
simmer for about 10 minutes being careful not to burn rice.

Yields about 1 cup per serving.

This sounds yummy.  I will have to try it.

Great recipe

I do something similar but with less steps because I'm lazy! I just cook the rice in my rice cooker then throw in the beans and tomatoes and some fat free cheddar. But adding cumin and bouillon sounds really good flavor wise so I think I might have to try it your way.
