I applied for an Undergraduate Nursing job at a local hospital recently.... and they called me for and interview! So I went for the interview this past Monday. They told me that I should be hearing by the end of the week whether I got it or not because they had interviews throughout the week still.. and not an hour after I left the hospital they called me and asked me if i wanted the job!!!! WOOOOHOOOOO!!!! I finish my clinical on April 21 and then they want me to start right after Easter weekend!! I am sooooo excited for this opportunity! The hospital is only like a 30 min bus ride from my house too and the busing there is excellent no matter what shift I will work!! I am sooo happy..
Other news.. my sister is getting married on May 23! She just set the date so we have to get ready for it fast! She asked me to make cupcakes for the wedding.. So thats exciting... except that I will be trying out flavors throughout the next while to see what kind she wants.. Self control will be needed to prevent me from eating too many of them! I am trying to be down to 260lbs by the time her wedding comes around... In the past week I have lost 4 lbs.. YAY! so i have started on my way there..
Today me and my other sister are going to the Women's show here.. So lots of walking today! I started off eating well today as well so hopefully this upcoming week will be good too!
These past couple of weeks have been uber hard to stay eating healthy for me.. there were many peoples birthdays in my family.. which then means eating out.. and birthday cake... soooo 5 birthdays later i was so scared to get on the scale this morning... and i was up ... i was 282.2... soooo i gained 1.4lbs UGHHH...
Good Afternoon Everyone! I hope that your day is going well. I found this really great cookbook for low fat / low sugar recipes; It's called Hungry Girl. There is also a website that has many recipes and ideas on it: www.hungry-girl.com So i decided to try it out. Today I made a minestrone soup. It is really good and very low in calories and fat. I've included the recipe and picture of the finished product. I thought i would try to add a few different healthy recipes a week that I try; because I know for me I am always looking for ideas for healthy dishes and snacks. Enjoy!
Mmm-mmm Minestrone
Two 14-oz. cans of fat-free vegetable broth Two 14.5-oz. cans diced tomatoes (Drained) One 15-oz. can white kidney beans (Drained and rinsed) One 10-oz. package frozen spinach, mostly thawed 1 cup frozen cut green beans 1 cup frozen peas and carrots 1 cup uncooked whole wheat rotini or penne pasta 1 Tbsp. dried minced onion 2 tsp. chopped garlic 1 tsp. Italian seasoning 1 bay leaf Salt and pepper to taste.
Directions
Combine all ingredients in a large pot on the stove. Add 1 cup water and stir it up. Cover and bring to a boil.
Reduce heat to low and allow soup to simmer, covered, for 10 minutes. Remove bay leaf, add salt and pepper to taste and serve!
Makes 10 servings
*Per Serving (1 generous cup) 105 calories 0.5g fat 512 mg sodium 19.5 g carbs 4.5 g fiber 4 g sugars 5 g protein
*** When I made the soup I added 2 TBSP of light plain cream cheese to give it a more creamy flavor. So the nutritional information for this would be altered in calories and fat to 111 calories, 0.85 g fat per serving
So i had a weigh in today... and it was disappointing i only lost 0.8lbs in 2 weeks.. and i had been working on it quite a lot... so im feeling frustrated with it.. but i guess the only thing to do is to brush off myself and keep on going.. hopefully next time it will be better results.
Its so cold here today. It is -25*C and windy so it feels more like -35*C. so it makes exercising outside pretty much impossible.. Does anyone have any ideas on good workout videos? I need to get some that can be done with minimal equipment (the less the better) Thanks!
Wow ..I had a super busy day today. I worked on my paper.. and some of my presentation.. so that is good. i got past the procrastinating! lol I got a big workout today... i helped my dad outside for about 5 hours.. i shoveled snow for about 2 hours plus tonnes of walking on the farm just doing random stuff... but it was fun.. and now i am really tired..lol hope everyone is doing well!
so during this week off I have to write a paper and prepare a presentation about tobacco to present to a group of grade 4 students on march 2nd. But so far i keep putting it off. soooo tomorrow i have to do some research for the project, and start writing my paper.. i guess i thought that writing it down may give me some motivation to write it and stop procrastinating.. lol hope everyone is having a good day! I decided that when i get to 269 lbs my incentive is going to be going for a massage. I have never been to one professionally and i think that i would really enjoy it. lol im kinda nervous for it though.
I am up at my dad's for the week... It is hard in some ways coming back here without my mom being here. I have always had troubles staying on track with my eating here; its like i feel like i want to eat all the time. I think its a combination of not having that much to do, and just feeling more depressed.. But so far I am doing ok, hopefully i can keep it up.

had a weigh in today and i was 281.6 so I lost 3.4 lbs since my last
weigh in. I'm happy with the loss but i am hoping that the next weigh
in will be more successful. I am going to try to do a weekly weigh in
to keep myself more accountable.
I have reading week coming up
starting the 19th of February, I am really looking forward to a break
from school! I am going to my dads for reading week and i need some
will power to not eat junk while I'm up there; but I can do it!

I came across a quote this past week: "It comes down to a simple question: what do you want out of life, and what are you willing to do to get it?" it was a kick in the butt for me to get out of this rut I have been in and get motivated, because really the only thing holding me back is me. hmmm.. made me think.. lol just a random thought, So here's to a great week!

So I haven't been around much for the past while. But I am back! Not too much has happened in the last few months... school school and more school. I just finished my first semester of my third year of nursing and am currently starting my second semester. Someone told me that the second year was the hardest... well I think they were wrong. Third year has been a crazy challenge, but I am up to it! I am in clinical this semester and my first rotation I am on a neurology and trauma unit, so it will be very challenging, but I am excited to use the skills that I have learnt over the past semester.
So it seems like I have gained just over 5 pounds over Christmas. But I am ready to take it off and then some!
