A Run and a Recipe

Thanks everyone for all your kind comments.  You’re the best!

 

I just came in from my first two mile run!  I had bought a new pair of running shoes Saturday, and then it rained ALL day Saturday, Sunday, and Monday!  I didn’t even know it was possible to rain that long without stopping.  Anyway, I tied up my new shoes after work and hit the road.  They felt so good!  My old shoes were about four years old, and had many miles on them – no tread left at all.  My new ones are so springy.  I did really well my first 1.5 miles; the last half mile was a real push.  Then, because of where my house is located, I had to finish with another six tenths of a mile up a really steep hill—but I made it!  I have a fellow teacher who wants to run my first race with me this summer.  We are looking at a two mile sweetheart race.  It’s all women and the first that my friend ever ran in.  I feel good having hit the two mile point with about five month to get it comfortable.  If anyone has any suggestions for a new runner, let me know.  I have no idea what I’m doing!

I have a new recipe for you.  I created it in my goal to eat more veggies.  I’m not a big fan, but this is a great recipe for green beans – so much flavor! 

Heather’s Green Bean Explosion

-(1 WW point per serving) Makes 2 servings

  • 1 small onion
  • 1 can green beans
  • No calorie cooking spray
  • small handful Salad Pizazz - (These are the best!  I use them on salads all the time, and then I throw them in recipes like this.  I use the Tomato N Bacon Parmeseano with Almonds)

 

  1. Saute the onion in a liberal amount of cooking spray (I use butter flavored for this).  Allow onions to carmelize a bit to add sweetness (about 10-15 minutes)

  2. Add green beans and Salad Pizazz to frying pan.  Allow to cook on a medium heat for about 15 more minutes. 

  3. Devour!

The beans do cook down quite a bit and usually eat the whole can myself.  It is amazing how much flavor these have.

-Set a specific exercise goal for yourself.  Having something to work towards has really energized my workouts that had become a bit stagnant.

recipe sounds yummy ma'am.  I will have to try.  I'm always looking for more creative ways to fix veggies.  You're doing great for the running.  Keep it up that last .5 mile will soon become  breeze!

Great Job!

Congratulations on your run!  I love to run, but I didn't always use to.  The hardest part for me was just getting out the door.  I also started at just 2 miles in January of 2003 and I've progressed to 5k, 10 k, half-marathons and even two marathons.  I even have two more marathons planned for 2007. 

I recommend Marathon by Jeff Galloway.  This is a run/walk method of building up your endurance.  I use this method due to a knee surgery a few years ago and I love the way a walk breaks up the run, it gives my muscles a break.  And when I'm tired I only have to think about the next two minutes til i can walk, rather than the next two miles that I still have to run.

Another book I recommend is No Need For Speed: A Beginners Guide to the Joy of Running by John Bingham.  He's also written The Courage To Start and Marathoning for Mortals, which I haven't read yet.  He also writes a column for Runners World Magazine.  Just go to www.runnersworld.com and search John Bingham.

One more thing, a must to read: First Marathons by Gail Kislevitz.  this is a collection of stories about peoples first marathons.  Very inspirational and motivational!  I know you might not be specifically looking for marathon information but you never know where your running might lead you.

I dont know what Salad Pazzaz is but I'm willing to take your work for it.  Sounds good, and any way to spice up veggies is great in my book!  I'll look for it inthe store.  Thanks for the tip! - Shelly
