It's a miracle!
I'm feeling a little more sane today. It's amazing how
losing 2 pounds in one week can make you feel so much
better. FINALLY! At least I now know that nothing seems to
be terribly wrong with my body - yet. :)
I've been working very hard so far this week. Hopefully I will
lose 2 more pounds. That would be very nice, indeed.
I'm off to bed. I shall write soon. Goodnight to all and be well!

Trying to hang on
This entry will be short because I am upset today.
I am not losing weight. I'm frustrated and exhausted.
I really don't know what else I can possibly do. I guess
I have to exercise more but I'm just so tired, which makes
it hard to get the energy and motivation to even want
to exercise. Why does this have to be so hard?
I know losing weight is hard to do but THIS HARD??
Maybe there is something wrong with my body.
This just doesn't seem normal.
I'm off for now. Ta!

Exercising is the pits!
I haven't written in here lately! I better get to it!
Exercising is making me really tired lately. I hope it
gets better over time. I really need some energy!
I wake up from an at least 7.5 hour sleep and I feel
as if I haven't slept at all. : (
I'm still doing 1 hour of exercising per day - I don't know
how the heck I'm keeping this up! I practically force
myself to do it. I really hate exercising with a passion!
I wish I was one of those few who really love it.
One more day of it and then I'll have the weekend free.
This Saturday I'm going to "The Wonderful Wedding Show"
here in Winnipeg with a friend. We will be on our feet for
4 hours! Ahh! My feet are going to kill. They can hardly stand my weight. I'd say they start to hurt after 30 minutes of
constantly standing on them. Oh yes, I will be in pain.
It should be fun, though - I've never been to a wedding show before.
That's enough for today! Boy oh boy, I hope I am losing some weight this week! *fingers crossed*

Victorious
I LOST 3 POUNDS! I finally did it! I worked so hard this week and it paid off! YAY! I'm almost at 30 pounds down... I will have to be patient. I can't wait until I get to 40 pounds down, or even 50! That would be fantastic.
Yesterday was Mike and my 7th anniversary. We went to Tony Roma's, went for a hour long walk in the park and then went to the movie, The Ringer, which we weren't too impressed with. We had a great time, all in all.
Today is a new week - time for me to get ready to exercise again. I hurt my ankle on Friday while doing DDR - I landed on it funny so I hope I will be able to exercise today. I really hope so. Well, here is to 3 pounds off - I'm a very happy camper!

Lunch with the Girls
Today I went out for lunch with my two great friends, Connie and Sarah. We met at The Olive Garden and I was faced with the dreaded BREAD STICKS! Sheesh, I could eat their kitchen's whole supply of those yummy, buttery-golden delights but I only ate 2! Yay! Let me tell ya, that was some iron will power at work there. All three of us had minestrone soup and shared a big bowl of tossed salad. We all enjoyed the food and came out of there full. Of course we also got a chance to catch up. It's always a blast talking with Connie and Sarah. I wish we could do it more often. =)
Well, yesterday I was dancing on my DDR pad and I landed crooked on my right ankle - OUCH THAT HURT!! Today my ankle really smarts. I hope it feels better for Monday - I have to get back on the exercise train! I only allow myself Saturday and Sundays off from exercise. I'll hope for the best.

T.G.I.F.
It's Friday! Yay! Well, that's it for my exercising this week. I exercise 5 out of 7 days and I take Saturday and Sunday off. I worked REALLY hard this week - exercising for one full hour per day. I really hope I have lost something. Anything!
This Sunday is Mike's and my 7th year anniversary of dating. We are going to go to Tony Roma's for dinner - I'm just going to enjoy myself - I won't worry about calories or fat. It is a special occasion. Besides, I think Mike would be a little ticked off if all I ate was a salad. I guess it can be a little treat for working so darn hard this week. I'm proud of myself - I really am!

Kicking some butt!
Today is going well. I did one hour of exercise for the first time today. I walked on the treadmill for 30 minutes and then hoped on my DDR pad (Dance Dance Revolution) and danced my little heart away for another 30 minutes. Hopefully keeping this up will help me lose some weight again. It's been a while!! =)

Monday - the start of a new week and so far this
week has been great! I had a yummy omelet
and apple for breakfast! For dinner I will be having a delicious meal from a great low fat cookbook I own:
"Chicken Breasts Stuffed with Goat Cheese and Pecans in Leek Sauce"
Long title but man oh man does it taste GREAT!
I absolutely love it! The fantastic cookbook is called, "Rose Reisman Brings Home Light Cooking" It's a fund raising project on behalf of the Canadian Breast Cancer Foundation. Because the recipe is too awesome not to share, here goes:
Chicken Breasts Stuffed with Goat Cheese and Pecans in Leek Sauce
~> Serves 4.
~> Preheat oven to 400°F (200°C)
~> Baking dish sprayed with nonstick vegetable spray
4 boneless skinless chicken breasts
2 oz goat cheese or feta cheese
1 tbsp chopped pecans
1 egg white
1 1/3 dry bread crumbs
1 tbsp vegetable oil
1 ½ tsp margarine
1 medium leak, thinly sliced
½ tsp crushed garlic
1 tbsp all-purpose flour
¾ cup chicken stock
1/3 cup 2% milk
1. Place chicken between 2 sheets of waxed paper; pound until flattened and thin.
2. Combine cheese and pecans until mixed; divide among breasts
and roll up to enclose. Fasten with toothpicks. Dip into egg white,
then into bread crumbs until well coated.
3. In nonstick skillet, heat oil; brown breasts all over, approximately 5 minutes. Place in baking dish; cover and bake for approximately 10 minutes or until chicken is no longer pink inside. Place on serving plate.
4. Meanwhile, add margarine to skillet;
sauté leeks and garlic until softened,
approximately 10 minutes. Add flour and cook, stirring for 1 minute.
Gradually stir in stock and milk; cook, stirring, until thickened, approximately
3 minutes. Pour over chicken
*Tip – To wash leeks properly, separate leaves
and rinse under running water to remove all dirt trapped between leaves.
*Make Ahead – Assemble and refrigerate breast early in day; brown and bake just before serving. Prepare and refrigerate sauce, adding more stock
if too thick when reheating.

Fat -- 13 g
Carbs -- 11 g
Sodium -- 472 mg
Cholesterol -- 81 mg
Fiber -- 1 g

Getting Ready to Regroup and Focus!
It's Sunday today. Mellow and quiet.
After reading a really good article on exercising,
I decided to really get focused in order to lose some more weight. The article is really great - covering what exercises are best for losing weight and how often you should do them.

My next goal is to lose 14 pounds which will make

My Second Entry
This entry will be way shorter than the first. Today is actually the 6th of January for me. I'm writing this at 2:00 am and yes, I'm well aware that I should get my buns into bed! Bad Kristy! =)
I'm having a rough time with my diet today. I haven't lost much in a while - I have been maintaining lately. Also, the disappointment of realizing that I didn't lose 6 pounds of fat but rather 6 pounds of water has really taken a hold of me. I hope that I will get my act together soon and start to again shed some pounds. =)
