RECIPE ALERT !!
Well, Cinders has been shopping, and sorted the washing out. She has just finished a rather delish' luncheon that she felt she should share with her fellow EP buddies, so here goes ....
Thai Prawn Salad - no cooking involved !! :
These ingredients serve 4 =
Salad Ingredients -
250g cooked and peeled tiger prawns
125g beansprouts
1 carrot peeled and grated
75g cucumber, finely diced
50g radishes, trimmed and grated
25g fresh coriander, chopped roughly
25g fresh mint, chopped roughly
Sauce ingredients -
1 teaspoon caster sugar (I used sweetner)
1 tablespoon light soy sauce
Juice of 2 limes - this helps to give the Thai salad flavour 
2 tablespoons sweet chilli sauce
1 teaspoon Thai fish sauce
Mix all salad ingredients in large bowl
Mix all sauce ingredients together in smaller bowl. Once thoroughly mixed pour the sauce over the salad and stir to coat thoroughly.
I had mine with a bread roll - Bread roll 2 points, salad 2.5 points
But this recipe was actually called Chinese Prawn Pancakes, cos they suggest wrapping the salad in chinese pancakes, but I couldn't find any in the shops, and once I started eating it really reminded me of a duck salad I have had at my favourite Thai restaurant, so I adapted it slightly 
Yes, some of the sauce ingredients aren't the usual things you'd have in the cupboard, but once bought, you have them there ready for next time 
So, I am yet to have any chocolate, although I am about to ditch the housework and go to visit my sister and 2 nephews, I wonder if I will manage to succumb from the easter treats there as well ??
