Roasted Veggies - for those asking!
(use whatever veggies you like, this is a basic recipe)
2 med red onions, peeled and quartered, 3 carrots, peeled and cut into 2 inch chunks, 2 med. yellow squash, 2 med zucchini, 2 med tomatoes cut into wedges (not too thin) Drizzle olive oil on the veggies and season with kosher salt and freshly ground black pepper. Toss all together to mix and spread out on a baking sheet in one layer.
Roast at 400 to 450 about 40 to 45 minutes. Caramelizes the veggies and they are very good! I use whatever veggies we have (we are farmers) :)

I love roasted veggies. Tonight we are having roasted asparagus. Roasted cauliflower is another favorite.

Those sound really good...I have always been afraid to try roasted veggies think I might burn the house down but that doesnt seem to hard...

my dh and your dh have something in common when it comes to alarm clocks. only when his alarm goes off in the morning (4:30 am), he hits me instead of the alarm clock and goes back to sleeping while the alarm has me wide awake! i am not kidding you! haha!

Thank you so much for your message on my blog..now why I decided to paint my bedroom just before xmas is a mystery to me and probably everyone else lol........my bedroom always looks a mess..stuff just chucked in the corners waiting to find a new home...my partner's (SP) bags of computor bits and cd's...so I thought..while SP is away i'll paint the walls hang nice curtains and make it look all lovely and neat....I've decided to paint the walls white..covering some horrible blue stripy paper that has been on the walls since i've moved in....like 6 years ago lol......well there was always another job to do..like the kids room and downstairs...so our room sort of got missed....so i thought if I had plain white walls...white flowing curtains..then I could have deep vibrant colours on the bed, and then because I hadnt got any particular colour on the walls I can mix and match my bedding...well that was the idea..not sure if it will work out but we'll see.
Good luck for this week hope your weightloss is good..and keep up the good work.

Love the roasted veggie recipe. We roast veggies all the time--exactly the same way you do, and with whatever we have on had, even beets! Yum-o!
