I'm back!
Good morning buddies!! I have been gone way too long and have missed so many of you. The support I received here was awesome and I look forward to getting back in the groove.
Life has been tough, my dad is finally doing much better and hopefully things can get back to some kind of normal. Whatever normal is. I asked someone that one time and they told me the only thing normal is a cycle on a washing machine. lol.
I'm going to try to catch up with all of you! I need to update my pics so I will work on that this weekend. I have continued to lose some, not lots but I haven't gained. yay!

Happy Valentine's Day!!
Hope everyone is having a wonderful day! Finally the sun is shining and it looks like spring may be on it's way!! yay!! I brought my walking shoes with me today so I can walk right after work. Packed a huge food bag with all kind of healthy goodies all OP, of course! :) ... and even have my water bottle!
Off to get coffee and catch up on everyone this morning. If you need to make something chocolate that is OP, I have a recipe to try..it's pretty good.

I can't figure out how to paste the recipe...I'm such a dummy!

Sliding back in!
I'm back again! My dad needed my care for the past few weeks but now he is doing much better and I'm ready to go again! I have been staying OP for the most part. I spent so much time on the road between home and hospital that it was a little difficult to eat exactly like I should and exercise.
I started walking again yesterday and packed my lunch today. Yay me :) ... Thanks for all of your prayers and thoughts while I was out. It means so much to know you all care.
I have a lot of catching up to do and some new goals to set. I am really slacking in the exercise dept and have not been drinking my water.
Daily to dos:
POST DAILY, drink 100 oz water, exercise!!

Happy Monday!
It really has not been a very good Monday but I'm really trying. I made myself come here today and write. Saturday night daddy had a relapse and he's now in ICU. Rough weekend, but he's getting out of ICU today and going to a regular room, hopefully. I could just cry if it would help (well maybe I did) but I'm trying to keep my chin up and keep on going. Surely all this has to get better.
As far as eating, I'm doing okay. None of my plans to exercise is working out but as soon as I can get dad back home, I'll try again. Not giving up!! This is just a fight I'm not going to lose.
Had a wonderful big salad and chicken for lunch. Ready for java!! Have a great day everyone! Thanks for your comments and support!

Time to Blog!
Okay, I have really been slacking in the 'blog' department! Thank goodness some of you haven't forgotten to give me a nudge and then there is one certain little miss mojo that is harrassing me..haha....
I have been having my own little pitty party this week and really needed that nudge this morning. When I opened my email, I actually smiled and then almost died laughing when I saw that commercial on OneDitto's blog! That was good! This past year was really horrible for my family and it's not quite over...almost. A little more drama on Tuesday sent me for a meltdown and to bed for a couple days. I'm back and realize I have to face some of these things and get them behind me. As far as a healthy lifestyle, I'm eating healthy and walking most days.
Today is a new day! I'm going to survive...thanks so much for all of those that care, it means a lot.

Hello!
Happy New Year everyone! I have just been slacking. Thanks for all the encouragment from your emails and notes wanting to know where I was! It did help to get me back in gear. I am not sure why I feel so blah, but I'm going to get back with the program!! Last year was a very tough 'personal' year and I am going to think very positive about this new one!

Making better choices over high fat cookies :)

Coconut Macaroons (serves 12 - Points 2
2 large egg whites
pinch salt
1/3 cup sugar (i have used splenda)
1 1/2 cups sweetened coconut flakes
1 tsp vanilla extract
1/4 tsp ground nutmeg
3 TBSP Flour
6 maraschino cherries, halved
350 oven ...Beat egg whites and salt to soft peaks, then gradually add sugar and beat until peaks are stiff, beat in vanilla. With a wooden spoon stir in half of the coconut, then sprinkle in flour, stir, then fold in the remaining coconut. Scoop 12 mounds a couple of inches apart on baking sheet. Add the cherry then bake for 15 minutes or until lightly golden. Very pretty and tasty. Enjoy!

Almost run over by a reindeer...
Well maybe it was a bus but I was out early this morning wogging!! wooohoooo... Now I'm blogging and wogging..ok, maybe I've been in the eggnog too much! I am so excited to say that I jogged and walked this morning and it was wonderful! Shelley, you and so many others have encouraged me so much that I decided I would try it again. I guess I let loose so many endorphins I couldn't contain myself..haha Off to a good start today and just wanted to share.

snack bag - apple, oranges, lf cheese, yogurt and popcorn :)

Scolded today!
Okay, I have been slacking on the 'blogging'! I was scolded a few minutes ago and told to get my butt in gear!! hahaha!! I have been trying to read some and keep up but it has turned into a crazy place around here. I did finally get my tree up and all my decorations out. I baked cookies all weekend to give to friends and neighbors and I have to report that I stayed OP!! YAY!! I made a few batches that were lower points that I allowed myself to nibble on some. My kitchen looked like a hurricane came through. But I had a blast. I like to get in my kitchen and play like I'm some chef on the Food Network! haha...
Hope everyone is having a great day and wish all of you a fantastic week! I have missed all of you! Guess what...today was my weigh in and I was down 2 pounds...wooohooo!!

food today - Oatmeal w/apples, grilled chicken salad and tonight it's grilled steak, veggies and salad.

Roasted Veggies - for those asking!
(use whatever veggies you like, this is a basic recipe)
2 med red onions, peeled and quartered, 3 carrots, peeled and cut into 2 inch chunks, 2 med. yellow squash, 2 med zucchini, 2 med tomatoes cut into wedges (not too thin) Drizzle olive oil on the veggies and season with kosher salt and freshly ground black pepper. Toss all together to mix and spread out on a baking sheet in one layer.
Roast at 400 to 450 about 40 to 45 minutes. Caramelizes the veggies and they are very good! I use whatever veggies we have (we are farmers) :)
