Rice (fine grate) 2 cups of raw white cauliflower, mix with 1/2 south
western eggbeaters & 2/3 cup 2% shredded Mexican cheese. (I added
garlic and salt to the mix, you can use Italian herbs as well)
Spray
baking sheet or pizza pan with non-stick calorie free spray
Pat
flat until you achieve a pizza shape and the thickness is about 1/4 even
(I gotta work on that)
Back at 450 degrees for about 20 minutes
until browning ... see picture
Flip to other side and cook an additional 10 minutes until crispy, I could have cooked mine a bit longer.
Top with 4 tablespoons Ragu Pizza Sauce spreed
evenly.
Top as desired, I am a veggie person so my pizza has red
onion, mushroom, green pepper and mushroom, 1/2 cup of 2% Mexican
shredded cheese.
Backed an addition 10 minutes at 450

Hello all.....I bet ya thought I ran away didn't ya! Wrong I have just been so busy. I am holding fast with those college classes. Algebra is killing me. It could still go either way. I haven't failed a class ever. I currently have a 83% in the class but the final is 35% of the grade, 2 hours long on campus and you can only use on side of a notebook page of notes. I have one more quiz to try to push that grade higher before the final Saturday the 15th.
Ethics and Finance are both A's going into the online, open book finals...
I have 24 more days of work before I am on summer vacation and swimming. YIPPEE! I am going to take Political Science and Biology but since I am not working I will have plenty of time.
I for the most part have been sticking to my diet, exercising when I can. I am only weighing in once a month. It has been awhile since I have updated here so you will note a 10 pounds loss.
The other exciting news is I have another grandchild on the way. Holly is expecting her 4th and last child in the first week of December. Abby is now 18 months, Andrew 3 years and Anna 9 years. They are going to have a house full.
I have been spending sometime in the garden, we have been having some awesome spring weather. My flowers are in bloom and I have my tomatoes planted.

I lost 5 pounds the month of
January bringing my total lost since May 102 pounds. I am only weighing
monthly, I currently weigh 274. It is easier & less restrictive for
me. I am just trying to stick to 1200 calories & make good choices.
I am so busy, I enjoy about an hour a day on facebook.
Something to do between Algebra equations as a means of relaxation. I
feel guilty now as I am procrastinating right now from getting started.
I am taking 3 classes,working full-time & running the medical class
on campus.
This past month Adam turned 18, Anna my
Granddaughter turned 9 and next weekend is my 20th wedding anniversary.
We are all in good health.
Sorry I have seemed to go missing. I am back to work with the new semester and it has created a little stress. I unwind on facebook playing games instead of here posting.
Perhaps that is why in the past two weeks I haven't lost any weight. I have been sloppy not exercising, I am just thankful that I haven't gained.
Tomorrow I also start the new semester in college. If all works well I will be taking 13 units which is full-time. That should keep me more than busy.

Hard to believe that my youngest Roman will be 18 next weekend.
Love you all and I have really been enjoying my time off. I suddenly realized that I haven't updated my weigh-ins I managed a pound loss in two weeks and I will weigh in again on January 9th. I return to work on the 4th a non-student day. Then on the 5th we start a new semester with some new students as well as old ones returning, kinda like a fresh start. Hard to believe that the school year is half over, seems like just yesterday is started.
Tonight we are going to the Country House to pick up the Grandkiddos and then over to my nephew's family for a dry New Years Eve party. Most of the family are non-drinkers and this party will include many little ones. We will have dinner and games. I am looking forward to seeing my sissy here from Belize.
Tomorrow time to knuckle down and forward ho for Twenty Ten!
Here is the recipe I used to make my pumpkin bread the other day.
2 cups sugar - I used splenda mix 1 15 oz can pumpkin 1 cup unsweetened applesauce 1/2 cup egg substitute 3 1/3 all purpose flour - I use whole wheat 2 teaspoon cinnamon 2 teaspoon baking powder 1/2 teaspoon salt 1/2 teaspoon allspice
optional nuts or golden raisins
Bake at 350 degrees for 50-60 minutes 12 servings 200 calories 1 fat 45 carbs 6 fiber 8 protein
by just a pound. But I am okay with that, if I never lose more than a pound a week I will be pleased as punch. Sugarfree punch that is. I am comfortable with my program, I don't feel like I am on a restrictive diet, I don't feel deprived, I am totally satisfied. Who could ask for more than that.
I have also reached the point in which I am once again comfortable in my own skin and I am enjoying the process of the journey and embracing the new day. The smile on my face these days is genuine.

We slept until 9am YES, I am sleeping just fine. No more episodes not even slight ones. I want to lose 50 pounds by April when I see MD again. It will be interesting to see what my lab results are like then. As far as the sleep study, no one ever called and I never got anything in the mail. I may not be a priority. To be honest I am not thrilled about doing it so I am not hunting down the paperwork. Not that it is painful or anything, just seems like a lot of hassle and I do think it has to do with weight and stress. Which I am working hard to alleviate.
Today a pajama day. I need one, I am doing light housework. I cleaned the pantry, cleaned the tub and I will do a little laundry. My house for once on the weekend isn't a HUGE mess. So I will just plug away at a few things here and there.
I am promising myself and now you that I am going to exercise everyday like MD asked. I will ride the bike and bounce on the stability ball everyday of vacation including Christmas. I am sticking to 1200 calories are less except on Christmas Day which I will allow myself 1800 calories. Everything will be entered in Daily Plate.
This morning I started off with my Christmas Decaf Coffee and Nutrisystem Egg Egg Frittata. I am not on Nutrisystems plan anymore but I have their food around to use now and then. This afternoon I am going to whip up some low fat, low carb pumpkin bread. It is so yum is made with whole wheat flour, egg whites and splenda. I spice it into servings and place in individual zip bags for portion control.
My Christmas shopping is done, just have some things to wrap that arrived in the post.
