no, I didn't drop off the face of the earth......
...I was just on vacation. (For what it's worth, I didn't do too terribly with food while I was away.)
This being the first week of school, things are going to buy and I am going to be tired...so I'm keeping it simple, foodwise.
Here's the rundown:
This week's snacks include berry smoothies, fruit salad, oatmeal with blueberries, applesauce, and popcorn with cinnamon.
This week's breakfast (every day--or weekday, at least) is an egg white omelet with pico de gallo.
The week's lunch (also the same each day) is a salad with chickpeas and lemon juice dressing.
I'm alternating between two dinners this week: spanish brown rice with red beans, and black beans with corn.
In addition to the food plan, I will also be hitting the gym each day before work.
Heaven help me.

Sunday menu
I just got back from a serious grocery shopping excursion. $93--yikes! (Though a lot of that was on non-food items. I hate when I run out of all sizes of plastic bags at once!) I have a yummy menu planned for this week, so the money was definitely worth it.
Breakfast
- 2 egg white and 2% cheese omelet
- steamed broccoli
- decaf coffee with splenda and skim milk
Lunch
- salad: tuna on mixed greens
- dressing: olive oil, lime juice, salt & pepper
Snack
Dinner
- grilled chicken (with whatever seasonings inspire me later tonight)
- grilled bell peppers and onion
- tomato & basil salad (with olive oil, salt & pepper)

Thursday menu
I met up with a friend for shopping this afternoon, so my menu is kind of funny...
Breakfast
- 2 eggs
- grapes
- decaf coffee with turbinado sugar
Snack
- cup of kale soup
- mini Babybel cheddar
Lunch/Dinner
- steak fajitas (used two tortillas, then ate the rest without)
- spicy rice
Snack
(Not a great day for ROYGBIV...but we can't all be perfect all the time!)

- kale soup with chicken chorizo
Snack (if I'm hungry)
*I'm altering the salad recipe to use red beans instead of white (I prefer the sweeter taste of the red beans) and to use both red and orange pepper, so I can get the OY of my ROYGBIV for the day.
