no, I didn't drop off the face of the earth......

 ...I was just on vacation.  (For what it's worth, I didn't do too terribly with food while I was away.)

This being the first week of school, things are going to buy and I am going to be tired...so I'm keeping it simple, foodwise.

Here's the rundown:

This week's snacks include berry smoothies, fruit salad, oatmeal with blueberries, applesauce, and popcorn with cinnamon.

This week's breakfast (every day--or weekday, at least) is an egg white omelet with pico de gallo.

The week's lunch (also the same each day) is a salad with chickpeas and lemon juice dressing. 

I'm alternating between two dinners this week:  spanish brown rice with red beans, and black beans with corn.

In addition to the food plan, I will also be hitting the gym each day before work.

Heaven help me.


Wednesday menu

 Snack

  • string cheese

Breakfast

  • 2 eggs scrambled with 2% cheese
  • steamed brussels sprouts
  • V8

Lunch

  • salad:  tuna on mixed greens
  • dressing:  lime juice, olive oil, salt & pepper

Snack

  • hummus
  • cucumber, celery, bell pepper

Dinner

  • grilled chicken
  • spinach-stuffed portabella mushroom
  • tomato and basil salad

Snack

  • cherry jello

Tuesday menu

 Snack

  • string cheese
  • 1oz pecans

Breakfast

  • 2 egg white 1/2 egg yolk omelet w/ 2% cheese
  • summer squash
  • V8

Lunch

  • salad:  chickpeas, tomato, cucumber, celery, bell pepper
  • dressing:  lemon juice, olive oil, scallion, cumin, paprika

Snack

  • cabbage slaw (vinegar-based dressing)

Dinner

  • @ a party -- planning on steak or chicken and salad

Monday menu

 Snack (pre-workout)

  • string cheese

Breakfast

  • 2 scrambled eggs
  • sauteed kale
  • V8

Lunch

  • salad:  grilled chicken on mixed greens
  • dressing:  olive oil and vinegar

Snack

  • homemade hummus
  • cucumber, bell pepper, celery

Dinner

  • baked tilapia
  • steamed zucchini and summer squash
  • tossed salad

Snack

  • cherry jello

Sunday menu

I just got back from a serious grocery shopping excursion.  $93--yikes!  (Though a lot of that was on non-food items.  I hate when I run out of all sizes of plastic bags at once!)  I have a yummy menu planned for this week, so the money was definitely worth it.

  • 2 egg white and 2% cheese omelet
  • steamed broccoli
  • decaf coffee with splenda and skim milk

Lunch

  • salad:  tuna on mixed greens
  • dressing:  olive oil, lime juice, salt & pepper

Snack

  • grilled chicken (with whatever seasonings inspire me later tonight)
  • grilled bell peppers and onion
  • tomato & basil salad (with olive oil, salt & pepper)

  • oatmeal with golden raisins and rice milk

Lunch

  • vegetable gyoza (with sesame ginger dipping sauce)
  • brown rice vegetable sushi (carrot, cucumber, avocado, spinach)
  • edamame

  • kale soup with chicken chorizo

Snack

  • cherry blueberry smoothie

Thursday menu

I met up with a friend for shopping this afternoon, so my menu is kind of funny...

Breakfast

  • 2 eggs
  • grapes
  • decaf coffee with turbinado sugar

Snack

  • cup of kale soup
  • mini Babybel cheddar

Lunch/Dinner

  • steak fajitas (used two tortillas, then ate the rest without)
  • spicy rice

Snack

  • popcorn

(Not a great day for ROYGBIV...but we can't all be perfect all the time!)

Wednesday menu

Lunch

  • red bean and broccolini salad
  • gum to deal with the garlic breath!

*I'm altering the salad recipe to use red beans instead of white (I prefer the sweeter taste of the red beans) and to use both red and orange pepper, so I can get the OY of my ROYGBIV for the day.
