I get to try out new recipes and damn it I just love food so the idea
of making yummy goodness to eat gets me excited.
So what am I making today you ask?
Well I made a Quinoa Salad.
Now, I've never had Quinoa (knowingly) before but I've been reading
a lot about it. It's a very versatile grain that can be used for breakfast, lunch and dinner.
When I went to the Farmer's Market yesterday I picked up
a Cucumber, some Beets, spanish onions, grape tomatoes, zucchini and squash.
I know, so good right?
I wasn't brave enough to buy Kale, but I will sometime soon.
So in my Quinoa salad I used cucumber, tomatoes, carrots, lemon juice, apple cider vinegar, olive oil, garlic, a dash of cayenne and cumin. I'll be bringing that to a dinner tomorrow night.
I also am trying my hand at refried beans. I'll be having those with lunch along with some tofu tacos....minus the taco part lol I didn't buy any wraps this week. I'm trying to avoid flour this week. So no bread, no wraps, and only rice pasta.
Speaking of rice pasta, I picked up some Spinach Rice Pasta yesterday at the store. Super excited to try that.
I also threw together some Black bean burgers because they are super handy to have on hand when I don't feel like making a huge meal or being complicated.
So that's what I'll be eating the next few days. I wonder what I'm going to do with those beets. Never cooked or really ate them before. But they are super good for you so I figure what the hell I'll give it a shot.
Did my yoga again yesterday, minus the ab workout.
I'll be biking and lifting tonight. It's just so hot during the day to do it now, and since I spent the morning cooking the rest of the day will be spent recording a children's book and doing Voiceover auditions.
My lovely Father's day was spent on my Dad's sailboat, eating, drinking, and singing karaoke with my family.
I made a Rustic Pasta, from the Kind Diet cookbook and it was a hit.
I also enjoyed a lovely Black bean burger, and some hummus and crackers.
Unfortunately, my evening ended with a lot drama involving my long term relationship coming to an end. So, to make myself feel better I indulged in a lot of bread and nonsense.
I feel over full and gross right now.
But I'm just going to head to bed and wake up and start new tomorrow.
Yoga in the AM and a walk and bike ride tomorrow evening.
I have quite a bit of work to do tomorrow and I have a webinar I am looking forward to.
I'm going to go to bed with a forgiving heart.

Spent the day playing Tour Guide for family today.
Walked quite a bit around Manhattan.
Enjoyed a nice mix of lunch from Whole Foods in Union Square and
a lovely dinner at Red Bamboo on West 4th.
YUM.
Got home tonight and discovered a lovely email about a couple vegan potlucks that are going to be happening in my area very soon. Exciting.
Also I'm going to be checking out the Farmer's Market tomorrow!
Can't wait to see what's available.
I don't think I'm going to be buying anything because I have plenty of food already made for the rest of the week and I'll be away this weekend but it'll be nice to see what is going to be available to me for the rest of the summer.
Well Friday was spent driving but I packed my self some
Brown Rice and Veggie Stir-fry which I ate for Lunch.
We headed out to dinner and I got a Veggie burger topped with Lettuce, Tomatoe, Onion, Mushroom, and red peppers. Yum. Side of curly fries. Double yum, and even left some on my plate. Yay for me.
Later that night I chowed down on some leftover Pasta Fagoli that I packed. Delicious.
Saturday started with a Cinnamin Rasin Bagel and ended with some Marinara Veggie Pizza.
Yesterday headed back south and again ate my Veggie Stirfry and spent the night in Long Island. We had a fantastic Indian dinner with some Garlic Naan, Veggie Curry, Yellow Daal and rice. Mmm Mmm Good.
After fluctuating for the past year I've decided to buckle down and take control of my life.
I've been flirting with being Vegan for about 18 months and I've finally taking the leap and going into it full force.
I think that if anyone else is considering to make this lifestyle change that there are 2 books you should read.
The Kind Life by Alicia Silverstone and Skinny Bitch.
Both are great for their own reasons and both have fantastic recipes.
I would also highly recommend the Vegan Planet Cookbook.
I plan on just writing down what I've been making and eating.
Not really worrying about portion control.
Just making sure no animal products and preservatives are in my system.
I'm also going to start a light exercise routine.
Mainly consisting on walking, biking, light weights and yoga.
Throw some meditation and general enjoyment for life and I think I'll be set.
