Doing Well

Okay, so I have seen that it is harder to keep up a blog for everyday.  I tried, but it is hard to come up with things to say to myself.  So, I have decided to only post things when they come up.  I am doing well.  I have choosen to eat more whole foods, and I am finding that it is working.  I am down to 257, which is great!  I am also happy that I feel better.  I am not all bloated like before and I am not very hungry between meals.  I am making sure that I stick to this so that I can succeed.

I also wanted to share that I have officially bagged my size 24 pants to give away.  I am now in the 22's (which they are tight), because I want to move forward and not gain back.  Now, I am on a mission to fit into the 20's and 2X's. 

I Don't Understand!

Well, this morning, I stepped on the scale and saw that I was up to 260.1 lbs.  What happened?  I am sticking to my plan and working out.  I don't know if it is time of the month that is casing it.  I will not go back to old habits though.  I would usually quit or say screw it!  But not now!!!  I am going to stick with this and do what I need to do.  I am okay.

Still Here

So, it is day four and things are going well.  I am up a some, but it is okay because I know that my weight will change throughout the week.  The real reason that I am weighing everyday is because I want to make sure that I stay under 260 lbs.  I have stuck to my eating plan and I am working out.  I find that it is getting easier to stick to it because I can eat whatever I want.  I am learning to make the right choices.

Another Day Down!

Okay, well, I have to say that things are going well.  I really cannot complain about it because yes, it is hard work.  But it is also very rewarding.  I am down to 258.4 lbs.  I know, it is awesome.  Now, it is my job not to regain the weight and to keep losing it.  I found that in the past, I would get into the 250's and feel that it would be a free for all.  Well, not anymore.  I am going to kick ass!  So, that is about it.  I am going to get in my cardio and weight training tonight because this morning I felt like poo.  Talk to you all later!

Weight Watchers Pumpkin Cheesecake

Pumpkin Cheesecake

Recipe By :Weight Watchers

4 Points per serving

 

9 graham crackers -- (2 1/2" squares), made into crumbs

1 cup low-fat -- (1%) cottage cheese

3/4 cup part-skim ricotta cheese

3/4 cup egg substitute

1/2 cup sugar

1 teaspoon ground ginger

1 teaspoon vanilla extract

1/2 teaspoon ground nutmeg

1/2 teaspoon cinnamon

1/8 teaspoon salt

1 (15 oz) can canned pumpkin puree

"An amazingly rich-tasting cheesecake, just right to serve as the finale to a holiday meal."

 

1. Preheat the oven to 350º F; spray a 9" glass pie plate with nonstick cooking spray. Sprinkle the graham cracker crumbs over the bottom of the pie plate.

2. In a food processor or blender, combine the cottage cheese and ricotta; process until smooth, about 1 minute. Transfer to a large bowl; stir in the egg substitute, sugar, ginger, vanilla, nutmeg, cinnamon and salt. Reserve 1/4 cup of the batter. Add the pumpkin to the batter; stir until blended. Scrape the batter into the pie plate, then drizzle the reserved batter in 3 concentric circles over the pumpkin batter. With a knife, lightly draw a line through the batter from the center toward the outer edge; about 2" from that line, lightly draw the knife through the batter from the outer edge toward the center. Repeat around the pie, alternating directions, to make a spider web.

3. Bake until a knife inserted in the center comes out clean, 45-50 minutes. Cool completely on rack. Refrigerate, covered, until ready to serve.

Makes 6 servings.

I Feel Great!

Well, it is day two and things are going well.  I did do my 60 minutes of cardio today and have stuck to my points and journaling my food.  I am very excited that I am moving forward and I feel stronger because of this.  I am also happy that I am down 1.8 pounds from yesterday.  I am finding that it is getting easier to get the motivation needed to lose the weight.  I am also doing a challenge on youtube, that I must admit is helping a lot.  I find that when there are challenges, I have more drive.  I know I should have the drive regardless, but I must admit that the challenges do help greatly.  I am on my way to being healthy.  Oh, before I forget, I will be posting a video of a recipe alternative to the unhealthy Pumpkin Cheesecake.  I found it in the Weight Watchers cookbook and cannot wait to try it.  I will get lots of pics and share the video here.

The Beginning of a New Mindset

Hello, my name is Vanessa and I have fought with my weight for many years.  I am here to say that I am ready to make changes to lose the weight for good.  I am tired of being this way and I am done with making excuses.  I will document my journey here and never quit or restart again, like I have in the past.  I guess you could say that I have the all or nothing mentality that always pushs my back.  Well, not anymore.  All are welcome to join in and take steps to becoming healthy and thin.

Starting weight is 262 lbs.  My first week, I would like to lose 5 pounds, which would put me at 257 lbs.  I would also like to gain confidence that I can accomplish anything that I put my mind to.  So, here I go, the first step to this journey!
